Mixed Spice, Not Allspice

To make Rock buns one uses a third of a teasspoon of mixed spice. And, I believe in America and elsewhere there's a 'Allspice'. Well, mixed spice isn't it...



This is Mixed Spice [For Rock Buns]





Mixed spice, also called pudding spice, is a British[1] blend of sweet spices, similar to the pumpkin pie spice used in the United States. Cinnamon is the dominant flavour, with nutmeg and allspice. It is often used in baking, or to complement fruits or other sweet foods.

The term "mixed spice" has been used for this blend of spices in cookbooks at least as far back as 1828[2] and probably much earlier.

Mixed spice is very similar to a Dutch spice mix called koekkruiden or speculaaskruiden, which are used mainly to spice food associated with the Dutch Sinterklaas celebration at December 5. Koekkruiden contain cardamom.



Ingredients

· Here is a typical blend of spices used to make mixed spice:

· 1 Tbs ground allspice

· 1 Tbs ground cinnamon

· 1 Tbs ground nutmeg

· 2 tsp ground mace

· 1 tsp ground cloves

· 1 tsp ground coriander

· 1 tsp ground Ginger

· Blend all spices together, and store in a sealed jar away from light.

Rock Cakes [the Adaption]



8 oz self-raising flour 2-4 oz dried fruit

A pinch of salt 1 oz finely chopped candied fruit

3-4 oz sugar 1 egg

Half teaspoon mixed spice 3-4 oz fat

Milk to mix



Mix the dry ingredients together and rub in the fat. Add the egg and milk and mix, till dough-like. [At this point, I half the mix and add fruit to one hald and not the other but that’s just me, putting chocolate and a few sultana’s in the other half. I do NOT use the candied peel and choose to use soft brown Demerara sugar; and NO salt. Add the dried fruit. And make into 10-12 little irregular shapes [mounds] on a baking tray and bake, in a fairly hot oven (400 F, mark6) for about fifteen minutes [I turn the tray round after 5-7 minutes, as our oven is old and has hot-spots]. Take out, cool on a cake rack and … Eat.
